INGREDIENTS (for 4 people)
- 2 zucchinis (chopped)
- 1 onion (chopped)
- 120g goat cream cheese
- 20g basil
- 60g parmesan
- 400g tagliatelle
- 1 tbsp chilli flakes
- 1 lemon (juiced and zested)
- 2 tbsp olive oil
- salt, pepper
PREPARATION
- Peel and chop onions. Wash and chop zucchini into small cubes.
- In a pan, sauté onions and zucchinis for around 5-7 minutes or until translucent. Season with salt and pepper.
- In a food processor or blender, process the onion/zucchini mixture, basil, chili flakes, lemon juice and zest until smooth. Return to the pan, add the cream cheese and stir until well combined and reheated.
- In the meantime, cook tagliatelle to package instructions.
- Grate parmesan.
- Toss pasta in the sauce. Garnish with parmesan and freshly cracked black pepper.
